Or.. a deliciously juicy watermelon salad with goat cheese – a combination made in heaven because the sweetness of the watermelon goes so amazingly well with the strong savory taste of goat cheese.

- Goat Cheese: I personally find that using crumbled goat cheese works best for this salad. Alternatively, you can also use feta cheese if you prefer.
- Balsamic Glaze: The addition of balsamic glaze adds a sweet tanginess that really makes this salad stand out. Alternatively, if you prefer, you can also use balsamic vinegar, lemon juice or lime juice instead.
- Mint: Fresh mint leaves add a nice pop of green that contrasts well with the red color of the watermelon.
How to Make Watermelon Goat Cheese Salad:
1. Cut Watermelon
Start by cutting the watermelon into bite-sized cubes. Place the cubed watermelon in a large bowl.
2. Add Goat Cheese
Sprinkle the crumbled goat cheese over the fresh watermelon cubes.
3. Add Glaze
Evenly drizzle the balsamic glaze over the watermelon and feta.
4. Garnish with Mint Leaves
Chop the fresh mint leaves and sprinkle them over the salad.
5. Toss and Serve
