Mangoes for the Summer

When I was still a little girl in tropical Singapore, my family and I lived for about 17 years in the red brick house on Sea Breeze Road.

One of the best parts of the house was the garden at the back, which while not exactly huge, was large enough to me when I was still young and small.

To the left of the garden was this huge mango tree, which bore plenty of fruit in the beginning years, and just before the mangoes would ripen, we’d wrap them in torn newspaper pages so the birds wouldn’t peck at them before they were ready.

Harvesting the mangoes was always an event, and once we used the long pole to pluck the ripe sweet mangoes from the tree, we’d pile them down on the floor, my chubby little fingers pointing at each one of them as I counted our “catch” for the day.

Then we’d cut them open, greedily biting into the yellow flesh bursting with flavor, until there was nothing left.

Mangoes always transport me back to that particular memory of my childhood, and the natural sweetness of this fruit brings me back to the hot days of summer.

The Creamiest Mango Milkshake

This mango shake recipe is creamy and sweet (like a mix between a drink and dessert), so you’ll be sipping on a refreshingly creamy sweet beverage you can enjoy all summer long – whether you’re lounging by the pool or the beach, cooking something on the backyard grill, or simply chilling out with your favorite book.

Recipe Notes + Substitutions:

  • Mangoes: I like using fresh mangoes when they’re in season, but if you don’t have access to fresh mangoes, frozen mangoes will work just as well.
  • Vanilla Ice Cream: Adding vanilla ice cream will make this delicious mango shake super creamy. If you are lactose-intolerant, go ahead and use dairy-free vanilla ice cream instead.
  • Milk: I used regular whole milk, but if you are lactose-intolerant, go ahead and use an unsweetened version of your favorite plant-based milk (almond milkcashew milkoat milkrice milk, soy milk etc).
  • Vanilla Extract: I like adding a bit of vanilla extract for extra flavor, but if you don’t have it on hand, feel free to leave it out.
  • Ice: Smaller ice cubes will be easier on your blender (depending on how powerful it is).

How to Make this Creamy Mango Shake (Step by Step):

1. Blend Ingredients Except Ice

Place the vanilla ice cream, mango chunks (reserve a few for garnishing) and vanilla bean paste in a high-speed blender. Beat until you get a homogeneous thick mixture.

2. Add Ice Cubes and Blend

Add ice cubes to the blender jar and blend well to combine.

3. Add Milk

Pour in the milk, close the blender with a lid and beat at medium speed for 1 minute until you get a homogeneous mixture.

4. Serve and Enjoy

Pour mango milkshake into two tall glasses, then drink up and enjoy this deliciously refreshing drink!

Dish by Dish Tips/Tricks:

  • No Fresh Mangoes? Use Frozen: I like using fresh mangoes when they’re in season, but if you don’t have access to fresh mangoes, 2 cups of frozen mangoes will work just as well!
  • Extra Mango Flavor: For an even more intense mango flavor, use mango ice cream in place of vanilla ice cream.
  • Use Other Fruit: This milkshake recipe is easily adaptable, so you can swap out the mango for 2 cups of other types of fruits (think bananas, pineapple, strawberries, blueberries, raspberries etc).
  • Want a Thicker Shake? If you like a very thick milkshake, simply cut down the amount of milk used. Start with 2 cups and then add more as needed.
  • Make Popsicles: If you want to make mango popsicles, pour the mango mixture into popsicle molds, then freeze until firm.

  • 1 cup vanilla ice cream
  • 3 cups milk
  • 2 teaspoons vanilla extract
  • 1/2 cup ice

Instructions

  1. Blend Ingredients Except Ice: Place the vanilla ice cream, mango pieces (reserve a little for serving) and vanilla bean paste in a high-speed blender. Beat until you get a homogeneous thick mixture.
