What is Beef Stroganoff?
Originally a Russian recipe, beef stroganoff (also known as ‘beef stroganov‘), is a savory dish made up of sautéed beef pieces served in a brown flavorful sauce made of mustard, broth and sour cream.
Traditional beef stroganoff recipes use sliced beef, but some less traditional recipes may sometimes use lean ground beef, or even ground chicken.
It is often served over pasta or rice, but you can also enjoy it on its own.
Is Beef Stroganoff Gluten-Free?
Traditionally, beef stroganoff sauce is often thickened with regular wheat flour (which contains gluten), and hence is not safe for Celiacs or those with gluten intolerances, unless it is specifically said to be so.

Recipe Notes + Substitutions:
- Beef Steaks: While there isn’t necessarily a particular cut of beef to use for beef stroganoff, I personally prefer tender marbled cuts with some fat will be best since the beef will be cut into slices are cooked. You can use boneless rib eye, tenderloin steak or sirloin steak, but avoid tougher cuts such as rump steak or chuck roast.
- Oil: I used sunflower oil, but you also use extra virgin olive oil, avocado oil, or another type of vegetable oil that you prefer.
- Mushrooms: You can use either white button mushrooms, baby portobello mushrooms, or other fresh mushrooms of choice.
- Onion: I used yellow onions, but you can also use white onion or red onion if you prefer.
- Flour: I used gluten-free all-purpose flour to keep this recipe gluten-free. You may also use corn starch, tapioca starch (tapioca flour) or arrowroot flour as a thickening agent if you prefer. If you are not Celiac or gluten-intolerant, go ahead and use normal wheat flour instead.
- Beef Broth: I used beef broth to add color and flavor to the gravy. Homemade beef broth is great, but store-bought beef broth or beef stock will work just as well. If you are Celiac or gluten-intolerant, make sure to use certified gluten-free beef broth.
- Sour Cream: I used dairy-free sour cream to keep this recipe dairy-free. You may also use coconut cream or full-fat canned coconut milk instead. Alternatively, if you are not Celiac or gluten-intolerant, go ahead and use regular sour cream, cream cheese, plain Greek yogurt or heavy cream instead.
- Mustard: I used Dijon mustard, but you can use any other type of mustard you have on hand.
- Pasta: I used gluten-free fettuccine noodles, but you can use any other gluten free pasta you wish. Alternatively, you may serve it over rice or eat it alone with toasted gluten-free bread.
- Note: The nutritional information for calories does not include the optional pasta or rice for accompanying the gluten-free stroganoff.
How to Make Gluten-Free Beef Stroganoff (Step by Step):
1. Cut Beef into Strips
Pound the beef steaks on both sides with a meat mallet, and then cut the beef into evenly thin strips.
2. Fry Beef Strips
Heat up the oil in a large skillet over medium-high heat and fry beef strips for 5-6 minutes, stirring occasionally. Then transfer to a plate.
3. Sauté Mushrooms and Onions
Add the chopped fresh mushrooms and chopped onion into the previously used skillet, then sauté the mushrooms for 5-6 minutes, stirring with a spatula.
4. Add Gluten-Free Flour
Reduce the heat to low, then add the gluten-free all-purpose flour to the pan, stir it well and then fry everything together for another 2 minutes.
5. Add Broth and Mix
Pour the beef broth into the skillet and mix thoroughly, breaking up all the lumps of flour. Bring to a boil.
6. Add Sour Cream, Mustard, Salt and Pepper
Add the dairy-free sour cream, mustard, salt and black pepper to the pan. Stir and let the creamy mushroom sauce simmer for 2 minutes.
7. Add Cooked Beef
Add the fried beef to the pan, mix and cook on low heat for 5-7 minutes. Cover the pan with a lid. If there is not enough liquid, pour in more broth or water.
8. Garnish and Serve
Serve the beef stroganoff hot over gluten-free fettuccine noodles, pasta of choice or rice.
Garnish with fresh chopped parsley before eating.

- Type of Beef Cuts to Use: For best results in this gluten-free stroganoff recipe, I recommend using tender marbled cuts with some fat will be best since the beef will be cut into slices are cooked. (You can use boneless rib eye, beef tenderloin or beef sirloin, but I would recommend avoiding tougher cuts such as rump steak or chuck roast.)
- For a More Economical Option: If you want an option that’s easier on the wallet, you can use ground beef to make gluten-free ground beef stroganoff instead.
- Serve Over Pasta of Choice: I like eating this gf beef stroganoff with gluten-free fettuccine, but you can also use other gluten-free noodles such as tagliatelle, spaghetti or short pasta. Alternatively, go ahead and enjoy it with rice or cauliflower rice for a low carb option.
- Thicker Sauce: If you want the sauce to have a thicker consistency, simply add a little bit more of gluten-free flour, corn starch or tapioca starch to the sauce amd mix it well.
- Swap Out the Protein: Not a fan of beef? In this case, you can also use chicken or pork or lamb (take note that the protein used will alter the taste of the dish accordingly).
- Make it Vegetarian: If you prefer a meatless version of this classic comfort food, you can leave out the beef and just use more mushrooms instead to get mushroom stroganoff.

- 1 cup sliced mushrooms
- 1 onion, thinly sliced
- 2 tablespoons gluten-free all-purpose flour
- 1 cup beef broth
- 1/2 cup dairy-free sour cream
- 1 teaspoon Dijon mustard
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- Chopped fresh parsley, for garnishing
- Gluten-free fettuccine noodles, for serving (optional)
