If you’ve never heard of a “pizookie”, you’re in for a deliciously sweet surprise!

A signature dish of the American restaurant chain BJ’s Restaurants, the pizookie (a play on the words pizza and cookie together) is basically a dessert consisting of a giant cookie (often a chocolate chip cookie) baked in a pan or skillet topped with vanilla ice cream, and I can’t help but think of how ingenious the idea of making a large cookie in a skillet is!

I mean, you still get the flavor of a chocolate chip cookie, but instead of manually rolling out each cookie before baking, you just transfer the cookie batter into a skillet and bake it directly!

Then everyone can dig into the skillet cookie and eat it straight from the pan… communal eating indeed! Or scoop out each portion and enjoy.

Either way… The whole family is going to enjoy it!

Why This Recipe Works:

  • Simple Ingredients: The main ingredients required for this gluten-free chocolate chip skillet cookie are easily accessible at the local grocery store (nothing fancy required!).
  • Easy to Make: Instead of having to roll out the dough as you would when making regular cookies, and all you need to do is to mix the dry and wet ingredients together, then transfer to the cast-iron skillet and bake!
  • Totally Gluten-Free & Dairy-Free: The best part is that this easy skillet cookie recipe is 100% gluten-free and dairy-free, which means that even those with Celiac disease or gluten or lactose intolerances can enjoy it without issues!

Ingredients You’ll Need:

Recipe Notes + Substitutions:

  • Butter: I used unsalted dairy-free butter to keep the recipe dairy-free. If you prefer, you can use melted coconut oil instead. If you are not lactose-intolerant, go ahead and use regular unsalted butter instead.
  • Sugar: I used a mix of dark brown sugar and white sugar. However, you may also use cane sugar or coconut sugar if you prefer. If you are diabetic or insulin-resistant, I highly recommend using granulated monkfruit sweetener (a 1:1 sugar substitute that is zero glycemic index and will not raise your blood sugar).
  • Eggs: Eggs are necessary for binding the ingredients together, so make sure you include them in.
  • Vanilla Extract: I like adding a little bit of pure vanilla extract for extra flavor, so I highly recommend you use it.
  • Gluten-Free Flour: For best results, I recommend using a good-quality gluten-free all-purpose flour blend that is made up of lighter flours/starches (such as rice flour, tapioca starch, corn starch and potato starch). I do NOT recommend using a gluten-free flour blend that is made up of heavier flours (such as garbanzo bean flour).
  • Xanthan Gum: Xanthan gum is the replacement for gluten in gluten-free flours and helps to better bind the ingredients together. If your gluten-free flour blend does not already include xanthan gum, make sure to add it in.
  • Baking Powder: Baking powder is the only leavening agent used in this recipe so make sure to add it in. Alternatively, you may use 1/2 teaspoon of baking soda instead.
  • Chocolate Chips: I used dairy-free chocolate chips to keep this recipe dairy-free. However, if you are not lactose-intolerant, go ahead and use regular chocolate chips or chopped chocolate chunks instead.
  • Ice Cream: I recommend serving this delicious chocolate chip cookie skillet with a few scoops of vanilla ice cream for a decadent dessert. I used dairy-free ice cream to keep this recipe dairy-free, but if you are not lactose-intolerant go ahead and use regular ice cream instead.

1. Preheat Oven

Preheat the oven to 350F.

2. Beat Butter and Sugar

In a large mixing bowl add the browned unsalted dairy-free butter along with the brown sugar and white granulated sugar. Whisk together until combined.

3. Add Eggs and Vanilla

Then add the eggs and vanilla extract, whisking again until the wet mixture is smooth.

4. Add Dry Ingredients to Wet

To the bowl with the wet ingredients, add the gluten-free all-purpose flour, baking powder and salt.

Use a rubber spatula to fold the dry ingredients into the wet and mix well to get a thick liquid batter.

5. Fold in Chocolate Chips

Add the dairy-free chocolate chips and fold into the chocolate chip cookie batter.

6. Pour Batter into Skillet

Transfer the cookie batter into a 10-inch cast iron skillet and spread out the batter evenly.

7. Bake Until Golden Brown

Place the cast iron pan in the middle rack of the oven and bake for 35 minutes, or until the chocolate chip skillet is lightly browned with crispy edges.

8. Let Cool Slightly

Remove from the oven and let the giant chocolate chip cookie cool for only a couple minutes.

9. Serve and Enjoy

Serve the warm gluten-free skillet cookie with scoops of vanilla ice cream (or your favorite ice cream) and enjoy!

Dish by Dish Tips/Tricks:

  • Use Mini Skillets: If you want to serve individual portions of this gluten-free chocolate chip skillet cookie, simple divide the cookie batter into 4 mini cast iron skillets and bake for 25 minutes until golden brown.
  • Use White Chocolate Chips: If you wish, go ahead and swap out the chocolate chips for white chocolate chips instead.
  • Additional Toppings: If you want an even more decadent dessert, feel free to drizzle some warm chocolate sauce or caramel sauce over the giant warm chocolate chip cookie skillet before serving!

  1. I’d love to make this cookie, but chocolate can make me sick (ugh!!!). Can you think of a a substitute for chocolate chips?

    1. Hi Julie! Sorry to hear that chocolate makes you sick! You can either leave out the chocolate chips, or you can use peanut butter chips. If you’re not lactose-intolerant, butterscotch chips or caramel chips may work too!
