Truffle Fries – Our Favorite Appetizer
Recently, parmesan truffle fries have literally become a weekly routine.
Here in Singapore where I’ve been visiting my family for the past months, they are available in pretty much every restaurant and cafe. Imagine crispy golden brown fries drizzled in truffle oil and sprinkled with freshly grated parmesan cheese… YUM!
And because it’s been such a big hit, it was high time to share a recipe for it!
In my opinion, once you try these delicious truffle fries, it’s hard to go back to regular fries – who knew truffle oil and some shredded parmesan could elevate plain old potatoes that much??

- Simple Ingredients: The main ingredients required for these parmesan and truffle fries are easily accessible at the local grocery store (you probably have most of them on hand)!
- Very Easy to Make: Preparing these truffle fries are extremely easy with the help of an air fryer (or deep-fry the potatoes if you wish)!
- Totally Gluten-Free with Dairy-Free Option: The best part is that this easy parmesan truffle fries recipe is 100% gluten-free, and can easily be made dairy-free too (just swap out the shredded parmesan for dairy-free parmesan)! This means that even those with Celiac disease or gluten or lactose intolerances can enjoy these tasty fries!

Recipe Notes + Substitutions:
- Potatoes:Â I recommend using russet potatoes (also known as Idaho potatoes) because they have a low-moisture and high-starch content, which is necessary for creating crispy fries. Of course, if you don’t have russet potatoes, feel free to use other types of potatoes instead (such as Yukon gold potatoes, red potatoes, etc.)
- Olive Oil: I like using extra virgin olive oil for frying the potatoes, but you may also use another type of neutral oil or vegetable oil (such as canola oil, sunflower oil, avocado oil, etc.) Alternatively, you may also coat the sliced potatoes with olive oil spray.
- Truffle Oil: Since this is a recipe for truffle fries, truffle oil is a key ingredient here. Using a good-quality truffle oil with great truffle flavor and fragrance will be the best.
- Parmesan Cheese: Parmesan cheese is a key ingredient in these Parmesan truffle fries, but if you are lactose-intolerant, you may also use dairy-free parmesan cheese instead.
- Fresh Parsley: I like using fresh chopped parsley for a pop of color and flavor. Alternatively, you may also use fresh chopped chives if you prefer.
How to Make Parmesan Truffle Fries (Step by Step):
1. Peel, Wash and Cut Potatoes
Peel and wash the potatoes. Cut them into even long strips using a mandolin or hand cut them.
2. Soak Fries
Soak the cut fries in an ice bath for 5 minutes to remove excess starch (which results in crispy golden fries).
Drain the potatoes and pat them dry using a clean kitchen towel or paper towels.
3. Season Potatoes
Season the dried fries with olive oil, ensuring they’re evenly coated.
4. Cook Fries
Preheat the air fryer to 375F. Place the cut potato fries in the air fryer.
Cook the seasoned fries in the air fryer at 375°F (190°C) for 35-40 minutes, tossing them every 10 minutes, until they’re crispy and golden brown.
(Or if you don’t have an air fryer, you can also heat up a pot of hot oil and then fry the potatoes in the oil until golden brown.)
5. Shred Parmesan & Chop Parsley
While the potatoes are cooking, shred the Parmesan cheese and chop the parsley.
6. Toss Fries with Truffle Oil
When the fries are done, place them on a serving tray. Drizzle the truffle oil around the edges of a large bowl.
Transfer the crispy cooked fries into the bowl with the truffle oil, then gently toss them to combine and ensure even coating. Season the homemade French fries with salt to taste.
7. Sprinkle with Parmesan and Parsley
Sprinkle the shredded Parmesan cheese and chopped parsley over the homemade fries.
8. Serve and Enjoy
Serve these homemade truffle fries immediately, while they’re hot and flavorful.
(TIP: They’re great on their own as an appetizer or side dish, but also great in steak frites!).
Dish by Dish Tips/Tricks:
- Soak Potatoes in Ice Water Bath: Make sure to soak the freshly cut potatoes in an ice water bath (and then drain and dry the potatoes well) in order to get rid of excess starch – too much starch on the surface may cause the fries to clump together, so doing this will help you get golden crispy fries.
- Use Frozen Fries: For convenience, you can also use frozen fries and follow the package instructions to cook them in the air fryer or deep fryer.

Here in Singapore, these truffle fries are a great hit across generations from the very old to the very young especially in our family.
The idea of soaking the freshly cut potatoes in icy water is great to bring out the crispy texture of the fries and at the same time reducing the extra potato starch turning these fries into a healthier snack.
