Recipe Notes + Substitutions:
- Types of Cheeses:Â Use the type of cheese you prefer, but generally I recommend using firm or semi-hard cheeses like aged cheddar, gouda, manchego, or mini brie that hold their shape. Alternatively, you may also use mozzarella balls if you prefer a softer cheese that still holds its shape.
- Types of Deli Meats: I used pepperoni, but any type of sturdy meat such as salami, prosciutto or chorizo will work fine too (you want a variety of meat that doesn’t fall apart easily).
- Pickles: I used cornichons (baby cucumber pickles) to add a bit of acidity to balance out the meats and cheeses. If the pickles you have are too big, simply cut them into smaller bite-sized pieces.
- Olives: You can use either black or green olives, just make sure to remove the pits so it makes the olives easier to eat.
- Cherry Tomatoes and Peppers: Both the cherry tomatoes and red drop peppers add a nice bright red color and sweet flavor to the charcuterie kabobs. Feel free to use whichever you prefer.
How to Make Charcuterie Skewers:
Prepare Cheeses: Cut the cheese into even 1/2-inch cubes.
Assemble Charcuterie Skewers:Â Prepare 8 bamboo skewer or kabob sticks. Poke a piece of gouda into each stick, followed by a cornichon, folded pepperoni slice, a pitted olive, a cherry tomato or a roasted red pepper, and finish with a cube of cheddar.
Serve and Enjoy: Arrange the individual charcuterie skewers on a large cutting board, garnished with fresh herbs (such as fresh rosemary sprigs or basil leaves for color). Serve immediately for a fresh, tasty appetizer or snack. These are perfect for entertaining or a quick no-cook treat.
Dish by Dish Tips:
- Gluten-Free:Â I used gluten-free pepperoni and cheeses to keep this antipasto skewers recipe gluten-free. However, if you are not Celiac or gluten-intolerant, use the type of meat or cheese that you want.
- Prep Ahead: You can easily prepare these antipasto skewers up to 4 hours ahead of time, then cover them with plastic wrap or place in an airtight container and chill in the refrigerator until ready to serve.
