The Air Fryer – A Miraculous Kitchen Appliance
One of the reasons why the air fryer has gained so much popularity of the years is simply because it produces crispy foods without using a copious amount of oil (which is the case when deep frying foods).
And, because cooking is fully contained within the air fryer, there’s also less mess in the kitchen, none of the unwanted oil stains on the kitchen walls or countertop, plus, less washing up to be done too!

Recipe Notes + Substitutions:
- Raw Chicken Breast: I like using boneless skinless chicken breasts and then slicing them into cutlets. Alternatively, you can ask your butcher to slice the chicken breast into cutlets for you. Pounding the chicken breast cutlets with a meat mallet before breading them takes a few more minutes, but those minutes are so worth it and ensure that the fillets are of even thickness and that they are cooked evenly.
- Gluten-Free Flour: I recommend using a good quality gluten-free all-purpose flour blend that is made up of lighter flours/starches (such as rice flour, tapioca starch, corn starch or potato starch). I do NOT recommend a gluten-free flour blend that is made up of heavier flours (such as garbanzo bean flour). If you are not Celiac or gluten-intolerant, feel free to use normal flour instead.
- Granulated Garlic: I love the taste that garlic imparts to any dish, and granulated garlic is a key ingredients to add flavor to the breading for these air fryer cutlets. You may also use garlic powder if you prefer.
- Ground Paprika: I like adding a bit of heat to these chicken cutlets with a sprinkle of ground paprika. Alternatively, you may also use red chili powder if you prefer.
- Ground Coriander: A little bit of ground coriander adds to the flavor profile. If you don’t like coriander, feel free to leave it out.
- Salt: I used normal table salt, but you may also use fine Himalayan pink salt, or fine sea salt if you prefer.
- Egg: The egg help the breading stick to the chicken meat, so I would not leave it out. If you don’t want to use the yolk, simply use two egg whites instead of one whole egg. Alternatively, if you are allergic to eggs or would simply prefer to keep the recipe egg-free, you may use acquafaba or an egg-replacer instead.
- Gluten-Free Panko: I used plain gluten-free Panko breadcrumbs to keep the recipe gluten-free, but you can also use normal gluten-free bread crumbs. If you are not Celiac or gluten-intolerant, feel free to use normal Panko bread crumbs or regular breadcrumbs instead.
- Olive Oil: I like using extra virgin olive oil for its flavor, but you may also use other types of vegetable oils if you prefer.
How to Make Chicken Cutlets in Air Fryer (Step by Step)
1. Cut Chicken into Cutlets and Pound
Cut the chicken breast lengthwise into two cutlets (or more if you chicken breast is bigger in size).
Place the cutlets on a cutting board, cover them with pieces of plastic wrap and pound each cutlet with a meat mallet (this will ensure they are of even thickness and cook evenly throughout).
2. Whisk Flour with Condiments
Mix the gluten-free all-purpose flour with the salt, granulated garlic, ground paprika and ground coriander in a bowl.
3. Coat Cutlets in Flour
Coat each cutlet in flour on both sides, shaking off any excess flour.
4. Dip Flour-Coated Cutlets in Egg
Beat the egg in a bowl, dip the cutlet into the egg on both sides.
5. Coat Cutlets in Panko Breadcrumbs
Place breadcrumbs into a shallow dish, the press the chicken cutlets in the panko mixture so that the fillets are completely covered.
8. Air Fry Chicken Cutlets
Air fry the chicken cutlets for 10 minutes, then flip them over to the other side and cook for another 3 minutes, until they are golden brown on both sides.
9. Serve and Enjoy
Transfer the crispy chicken cutlets to a plate, serve with greens and enjoy!
Dish by Dish Tips/Tricks:
- Pound the Cutlets: Make sure to pound the chicken cutlets with a meat mallet (looks like a hammer) so that the cutlets are evenly thick. This may take a few more minutes, but trust me, having the cutlets of even thickness will allow them to cook through at the same time.
- Place Cutlets in Single Layer: It’s important that the cutlets are placed in a single layer in the air fryer basket so that there is space for the hot air to circulate all over the cutlets. This will allow the cutlets to be crispy and golden brown all over. If you plan on doubling or tripling the recipe, and depending on the size of your air fryer, you may need to cook the cutlets in various batches in a single layer to ensure the best results.
- Optional Condiments: I used granulated garlic, ground paprika and ground coriander in this air fryer cutlets recipe, but you can also use other seasonings such as onion powder, chili powder, dried parsley, dried oregano, black pepper, Italian seasoning etc.
- Sauces to Accompany the Cutlets: These crispy cutlets will go great with our favorite sauces: garlic aioli, homemade sriracha chili sauce, or basil walnut pesto.

Totally agree with you Felicia that the air-fryer does help to cut down a great amount of oil which is needed to fry food in the traditional way.
This is a healthier way of frying food which does not compromise on the outcome of taste and texture of the food cooked – just as yummy and crispy! 🙂
I really love my air fryer !
Sending you love and blessings from SG!
