Why I love My Air Fryer
Since buying the air fryer, Juan and I use it at least once a week and have been experimenting with so many air fryer recipes.
It’s such a miracle kitchen appliance that I almost can’t imagine how we managed to survive without it before.
Healthy Air Fryer Snacks with Less Oil
Mostly, what I love about it is how air frying manages to create crispy food without using the insane amount of oil that is usually required for deep frying foods.
We’ve made vegetarian snacks such as crunchy air fryer kale chips, crispy air fryer tofu, air fryer chickpeas, and delicious air fryer plantains.
But even if you’re not that into veggies, the air fryer also produces the most crispy air fryer chicken wings, amazing air fryer chicken tenders, and mouth-watering air fryer bacon.
Amazingly Crispy Air Fryer Potatoes
To be honest, the main reasons that we bought the air fryer was to cook potatoes – and if all we ever did was cook potatoes with the air fryer, it would still be totally worth it.
Our favorite air fryer potato recipes include these crispy air fryer french fries, these insanely impressive (but actually really easy) hasselback potatoes, and of course, these impossibly simple air fried diced potatoes.
Why This Recipe Works
- Simple Ingredients: With a very short ingredient list, there’s nothing fancy required at all! Plus, they’re ready in under 30 minutes!
- Little Oil Used and No Oil Spatters: The great thing about air frying potatoes means that you’ll use very little oil compared to deep frying. With just enough oil to coat them and turn them a beautiful golden brown, the potatoes are cooked inside the air fryer basket with the air fryer closed, so you won’t have any oil splatters on your kitchen walls!
- Perfectly Crispy: Crispy and golden on the exterior, and perfectly cooked on the inside, these air fried diced potatoes are going to be your next favorite snack, appetizer or perfect side dish (whatever you prefer to call it!).
- Flexible: While these make a great snack or a delicious side dish, these potatoes can also double as air fryer breakfast potatoes if you wish to add a fried egg on top!
- Gluten-Free, Dairy-Free and Vegan: Given that these easy air fryer potatoes are naturally gluten-free, dairy-free and vegan, it means that even those with Celiac disease or gluten or lactose intolerances, as well as those simply on a gluten-free or vegan diet can enjoy them too!
Ingredients You’ll Need:

Ingredient Notes/Substitutions:
- What Types of Potatoes: You can definitely use whichever potato you prefer – given that there are so many types of potatoes available. I personally like using russet potatoes in this case because they cook up softer in the interior, but you can also use Yukon gold potatoes, fingerling potatoes, red potatoes or even baby potatoes.
- Skin On or Off: In this case, I peeled the potato skin off, but you can always leave the skin on too.
- Fresh or Frozen Potatoes: This air fryer roasted potatoes recipe uses fresh potatoes, but you can use both fresh or frozen. If you’re using frozen potatoes, there’s no need to defrost them. Just make sure to coat the potatoes with oil and cook them for 5 to 10 minutes longer than when using fresh potatoes.
- Oil: I like using sunflower oil because I always have a bottle of it on hand. Alternatively, you can use another type of vegetable oil such as coconut oil, avocado oil, or olive oil.
- Season Accordingly: I left the potatoes plain in this recipe, but feel free to use your favorite seasonings, such as garlic powder, onion powder, chili powder or Italian seasoning.
- Add Herbs: If you like, you may also add sprinkle of herbs such as fresh rosemary, chopped garlic cloves or oregano.
How to Cook Diced Potatoes in the Air Fryer (Step by Step):
1. Preheat and Grease
Preheat the air fryer to 400F and spray the air-fryer basket with non-stick cooking spray or brush it with oil.
2. Wash and Peel
Wash and peel the potatoes.
3. Dice the Potatoes
Cut the potatoes into small, even-sized cubes.
4. Toss Potatoes with Oil
In a large bowl, toss the diced potatoes with oil until the potatoes are coated all over.
5. Transfer Potatoes to Air Fryer
Transfer the potatoes to the air fryer basket, making sure that they don’t take up more than half of the basket.
6. Cook Potatoes and Shake Every 10 Minutes
Cook the potatoes for 30 minutes, shaking the basket every 10 minutes to get them to cook evenly on all sides until golden brown.
Serve with a sprinkle of salt or seasoning of choice.
Dish by Dish Tips/Tricks:
- Do Not Overcrowd the Basket: The amount of potatoes you can cook per batch will depend on the size of your air fryer basket. As a rule of thumb, to ensure crispy potatoes, I recommend not filling more than half of the air fryer basket so there is sufficient space for the hot air to circulate and allow for the potatoes to crisp up on all sides. If necessary, cook the air fryer potatoes in 2 or 3 batches to ensure they crisp up evenly.
- Eat Immediately: These air fryer diced potatoes are crispiest when just cooked, so much you sure you eat as soon as they’re out. Alternatively, if you are not eating them straightaway, simply heat them up for 5 minutes in the air fryer at 400F to crisp them up again before eating.
